- In a large mixing bowl, beat 4 sticks of softened unsalted butter and 2 cups of sugar together on high speed until the mixture becomes light and fluffy. This should take about 5 minutes and is crucial for achieving the cake’s tender texture.
- Add the Flavoring:
- Mix in 1 teaspoon of pure vanilla extract or almond extract until fully incorporated into the butter-sugar mixture.
- Incorporate the Eggs:
- Add 9 large eggs, one at a time, beating well after each addition. Make sure to scrape down the sides of the bowl to ensure all ingredients are well combined.

- Combine the Dry and Wet Ingredients:
- Gradually add the flour mixture to the butter mixture, mixing well between each addition. Be careful not to overmix, as this can result in a dense cake.
- Prepare the Cranberries and White Chocolate Chips:
- In a separate bowl, coat 1 cup of fresh cranberries with a little flour to prevent them from sinking to the bottom of the cake. Fold the floured cranberries and 1/2 cup of white chocolate chips into the batter gently.

- Divide and Bake:

- Prepare the Cream Cheese Frosting:
- In a large bowl, cream together 1/4 cup of softened butter and 5 ounces of cream cheese until smooth. Gradually add 1 1/2 cups of powdered sugar and 1 teaspoon of vanilla extract, mixing until the frosting is thick and spreadable. Add more powdered sugar if needed to achieve the desired consistency.
- Frost the Cakes:
- Once the cakes are completely cool, generously spread the thick cream cheese frosting over the top of each cake. Place the cakes in the refrigerator to allow the frosting to set.
- Add the Finishing Touches:
- Sprinkle 1/2 to 1 cup of regular chocolate chips and 1/2 to 1 cup of dried cranberries over the frosting. Or you can use fresh cranberries like we did. Melt 1/2 cup of regular chocolate chips in a microwave-safe bowl, heating in 20-second intervals and stirring until smooth. Drizzle the melted chocolate over the cakes using a spoon.
- Serve and Enjoy:
- Allow the cakes to set for a few minutes to let the frosting and toppings firm up. Slice and serve to your delighted guests, showcasing the beautiful layers and festive toppings.
